Fetta Risotto Balls

This is a great recipe to use up any left-over risotto

Ingredients
Left over risotto
2 eggs
breadcrumbs
Fetta or mozzarella cheese

Method
Mix risotto with 2 eggs. Fashion into balls. Wrap each ball around a block of fetta or mozzarella cheese. Cover in breadcrumbs. Fry in deep pan with lots of olive oil.
